土雞: 1隻, 土豆: 中等大小(5個), 皮芽子(洋蔥): 1個, 生薑: 適量, 蒜: 6瓣, 八角: 2個, 花椒: 30顆, 辣豆瓣醬: 2大勺, 干辣椒: 1大把, 生抽: 3大勺, 老抽: 1大勺, 冰糖: 適量, 油: 適量, 料酒: 適量, 鹽: 適量, 彩椒: 適量, 麵條篇: , 高粉: 800g, 雞蛋: 2隻, 鹽: 1勺, 溫水: 350g
步驟
1鍋里放水,土雞洗凈切塊放入鍋里煮開,撈起晾乾

2土豆去皮切大塊狀,彩椒切塊,一起放入盆中待用

4鍋里放入適量植物油,再放入冰糖

5待冰糖成棕色時迅速倒入雞塊翻炒

6待雞塊全部上色時

7再放入洋蔥,大蒜,花椒,八角,干辣椒,豆瓣醬,鹽一起翻炒,再加入生抽老抽料酒翻炒

8再加入清水,沒過雞塊

9準備好高壓鍋,鍋里倒入切好的土豆

10再倒入雞塊

11蓋好鍋蓋,放在爐子上大火燒,等高壓鍋上氣再中火壓30分

12等30分過後,鍋里自動出完氣,打開鍋蓋

13放入彩椒,再蓋好鍋蓋,放在一旁待用

14此步驟得在炒雞塊之前做800g高粉+2隻雞蛋+1勺鹽+350g溫水揉成團,醒10分鐘,再扞成3片圓餅狀均勻抹上植物油,如圖

15然後再蓋上盆子醒2個小時(此兩步驟得在炒雞塊之前做)

16醒完後麵條切成條

17鍋內水燒開,放入一勺鹽
