原料
中筋麵粉: 230克, 全麥麵粉: 70克, 海鹽: 3克, 雞蛋: 2個, 水: 水和雞蛋液體總和140克, 肉糜: 200克, 料酒: 1勺, 黑胡椒粉: 適量, 蔥末: 適量, 豆瓣醬: 2勺, 甜麵醬: 1勺, 郫縣豆瓣醬: 1勺, 油: 適量
步驟
1將全部材料混合揉成團後,醒30分鐘(醒的時候記得用盆蓋一下)!做麵條?的麵糰要硬一些,否則沒辦法過壓面機

2醒發好後分成兩份,先壓成面片!

3復興電動壓面機,1檔壓6次,4檔過3次;

4壓成面片後,記得撒麵粉,否則會沾在一起;

5最後再壓成想要的麵條寬度就可以啦;兩種全麥麵條? 一個粗的(前面的那種,用的4檔)一個薄的(後面那種,壓面用6檔),都很勁道;

6多撒些粉,晾一下;

7如果一次吃不完可以塑封后冷藏保存1周;

8下「面」時,水裡可以放些鹽,這樣防止面粘在一起,水「滾開」放面,待再「滾開」加一杯冷水,連續三次,面就好了;撈出放入純凈水中過一下,更清爽;
