4揉出氣泡揉至表面光滑

5取大小合適的劑子揉成麵糰擀成長圓形,刷油對摺,用刀輕輕劃出荷葉形狀

6二次醒發好上鍋蒸10分鐘,要旺火,蒸好了別急著拿出來,不然的話皮會變硬。
7唔了10分鐘左右鍋里的熱氣淺淺消失再拿取出來,這個時候荷葉餅的表皮已經降溫,不會因為驟然的溫差使表皮收縮發硬,看!多鬆軟,雖然有氣泡?可是美顏後問題不大……

8裡脊肉切細條,拌澱粉入鍋炒變色斷生,另取一個碗調汁:醬油、糖、鹽等,起鍋倒少許油燒熱放蒜末爆香,到甜麵醬炒熟,然後把調的碗汁到進去翻炒至冒泡時將我們炒過的肉絲倒進去不停翻炒至收汁裝盤
