1準備材料~

2木梳準備好(放心哈,新買噠,就是做麵食用的)~

3南瓜洗凈去皮切塊放入盤中隔水蒸熟(大概蒸了20分鐘)~

4蒸好用勺子搗成泥狀備用~

5麵粉+白糖+酵母=混合麵粉~ 倒入南瓜泥~ 攪成絮狀~ 揉成光滑的麵糰~

6蓋上保鮮膜放溫暖處首次發酵至2倍大~

7發酵好的麵糰,用手指沾些麵粉戳一下,不回縮不塌陷就發好了~ 想要蒸好的荷葉餅表面光滑,就要多揉至一會排氣~ 這是我揉了10分鐘的時候,切開裡面還有氣孔~ 大概揉了15分鐘,切開完全看不到氣孔就可以了(可用麵包機揉,更省力)~

8將麵糰滾圓~ 揉成長條狀~ 切成均勻的劑子~ 取出一份擀成薄厚均勻餅皮~

9餅皮上塗抹一層植物油~

10對摺餅皮~

11用梳子先壓出3道紋路~

12在間隔3道紋路旁邊再分別壓出短一些的紋路~

13捏出扇把~

14依次將全部的荷葉餅整形好~

15將荷葉餅距離分開些擺在鋪有屜布的蒸鍋上,蓋上鍋蓋2次醒發至少20分鐘以上~

16醒發好大火燒開,轉中火蒸10分鐘,關火燜5分鐘即可(打開鍋蓋時,水蒸氣不要滴在饅頭上)~
