1將三枚雞蛋蛋清蛋黃分離

7取三分之一蛋白放入蛋黃糊中,翻拌均勻

8再倒回蛋白中,翻拌均勻

9烤盤鋪上烘焙紙,倒入攪拌好的麵糊,表面輕輕抹平,輕震幾下,放入145度烤箱,烤20~25min

10烤好晾涼
11冷凍的蛋撻皮取出室溫放軟後將其壓平
12在蛋撻皮上刷果醬(果醬選自己喜歡的就行)

13用稍小於蛋撻皮直徑的圓形模具在蛋糕上壓出6個圓

14把壓好的圓形蛋糕體放在蛋撻皮之上,在蛋糕上再放適量果醬

1570g蛋清分三次加入30g糖粉,打至乾性發泡,裝入裱花袋(我用的8齒裱花嘴)

16在果醬四周擠上蛋白霜

17再將蛋撻皮四周和果醬上面分別擠上蛋白霜,直至表面全部用蛋白霜覆蓋住,表面再撒上適量糖粉,烤箱200度,烤5min後,改上下火90/180度,繼續烤15min
