6蛋清加幾滴白醋,分兩次加入剩下的一半砂糖,用電動打蛋機打至中性泡發,盆反轉不會滴落

7打發好的蛋清分三次加入蛋黃糊里,每次都拌勻了再加入下一次,2-8點方向切拌,避免消泡,此時預熱烤箱160℃上下管
