料酒: 适量, 干辣椒: 5个, 花椒: 适量, 姜: 5片, 酱油: 适量, 盐: 适量, 鸡精: 适量, 大蒜: 15个, 葱: 2根, 黄豆酱/豆瓣酱/干锅酱: 适量, 香菜: 适量, 椒盐: 适量
步骤
1先将鸡洗干净剁成小块用少许盐腌一下,鸡块越小越入味哦~

2葱,姜,蒜,干辣椒,花椒,八角准备好备用

3锅中放入油加热

4下鸡肉翻炒

5鸡肉炒至金黄色,可根据自己的口感调整煎炸的时间,我比较喜欢吃硬的所以炸的时间长^ _ ^

6鸡肉炸好后铲出放置一边,锅中剩余的油继续加热后倒入葱,姜,蒜,干辣椒爆出香味后再加入2勺黄豆酱或者豆瓣酱爆出香味(我这次放的是2勺豆瓣酱和2勺干锅底料)

7倒入鸡肉加少许酱油翻炒

8再加少许糖,青椒及小尖椒翻炒

9待鸡肉着色爆出香味后放入椒盐及少量鸡精调味

小技巧
1.腌制鸡肉时只能放少许盐,不然后面再加的调料会很咸 2.鸡肉一定要炸至金黄色才好吃
