手指饼干: 200克, 淡奶油: 125克, 咖啡酒: 100克, 马斯卡彭芝士: 250克, 细砂糖: 70克, 蛋黄: 3个, 水: 65克, 吉利丁片: 10克

1提前称好各原材料!以免做的时候手忙脚乱!图中的蓝色包装为奶油奶酪,是我不小心放进去了,请忽略!

2用凉开水泡吉利丁片,不能用自来水哦!泡的同时请放冰箱!

3细砂糖和水倒在碗里,中火加热至沸腾!

4加热的加热煮糖水的同时打发蛋黄,颜色稍变白,体积变大即可!

5让糖水继续沸腾两分钟!

6蛋黄打成如图所示!

7将糖水慢慢倒入蛋黄,边倒边快速搅拌,以免糖水把蛋黄烫熟!这一步就是在给蛋黄消毒!

8全部倒入后中速搅拌!直到蛋黄液冷却!

9冷却后放在一旁备用!

10从冰箱拿出吉利丁片,将水倒掉,隔水加热!

11隔水加热,直到全部变成液体!

30用保鲜膜密封!放入冰箱冷藏!是冷藏不是冷冻哦!

31冷藏一夜后,从冰箱取出用热毛巾捂一下模具四周,或者用吹风吹模具四周帮助脱模!
