原料
牛里脊或牛臀肉(牛里脊嫩,但我个人更喜欢牛臀肉,很有嚼劲,吃起来更香: 300克, 大蒜头: 2颗, 蛋清: 半个, 姜粉,料酒,黑胡椒粉,老抽,生抽,糖,现磨黑胡: 适量
步骤
1先处理牛肉,牛肉洗干净,用厨房纸巾吸掉多余的水分,把筋都去掉,切成1厘米见方的小块

2在切好的牛肉里,加入1小勺(1tsp)姜粉

3加1小勺(1tsp)料酒

4加入1/4小勺黑胡椒粉

5加入1小勺(1tsp)生抽

7加入半个蛋清

8这些东西都加好后,稍稍拌匀,再加入1/2小勺(1/2tsp)淀粉,再拌匀

9拌匀后,放在一边腌制一会

10然后处理大蒜头,把大蒜头的皮都剥掉

11锅里放50克油,油热后,转中火,放入大蒜头煸一下

12直到大蒜头变焦黄,只要焦黄,不要煸过头发黑了,把煸好的大蒜头盛出

13大蒜头盛出后,锅内的油留着,把腌好的牛肉粒倒入,开中火翻炒

14直到牛肉粒也有一点点地焦黄,加入1小勺(1tsp)老抽,翻炒均匀

15把煸好的大蒜头倒入,一起翻炒

16再加入1小勺(1tsp)糖,翻炒均匀,即可出锅
