1豆腐干横着一批三,然后切细丝(批的时候慢一些,小心手。慢工出细活哈)

2火腿切丝,鸡肉用手顺着纹路撕成细丝

3虾仁洗净加淀粉、盐、蛋清捏匀

4青菜浸泡洗净

5烧开一锅水,下豆腐干丝煮开,捞出。待水再开,再倒入豆腐丝煮开

6捞出倒入凉水中过一下

7坐锅上火,倒入适量油

10锅洗净,再上火,倒入史云生清鸡汤(多一些)(家里有自己熬的鸡汤最好了)

11加入干丝(这时的鸡汤略少,后来我又加了一些,所以大家做的时候鸡汤稍微多放一些)

12加入火腿丝、鸡丝、海米

小技巧
1、做大煮干丝必须要用白豆腐干,这样做出来的干丝很软糯。以前一直用厚百叶做,结果做出来有点苦涩味 2、干丝必须入开水锅煮开二次再浸入冷水中,这样可以去除豆腥味,还可以使干丝更软糯些 3、用鸡汤煮干丝,使得干丝更鲜 4、加入了火腿、海米、鸡丝、虾仁,都会使干丝更鲜 5、炒好虾仁后,锅子要洗净再加鸡汤,这样做出来的汤不油腻,很清爽很鲜美
