福州人最熟悉的鱼汤就是这碗“酸笋鱼头汤” 福州话里有“要吃鱼汤七十二”之说 而吃笋丝鱼汤最重要的就是要有好的酸笋 我们的酸笋丝是采自山区的麻笋,这种名叫六月笋的夏笋只在夏季生长 而酸笋也只可以在夏季才可以制作

鱼头, 酸笋丝, 软豆腐, 盐

1鱼头一个,酸笋丝

2需要把鱼头里牙与腮连接部分去清楚,这块圆形的软骨需要去除干净,因为这块最腥,只要把这块拿掉,鱼多洗几次,就不会腥了
