1把姜切成片,葱切成段

2把洋葱切成适中大小,去除酸梅的顶,轻轻压成蓉

3把鸭洗净切件,用老抽均匀地涂满鸭件

4把油加进大锅内,煎鸭件至鸭皮呈金黄色,放在一旁备用

5同一只锅, 加少许油,炒香蒜头、姜片及葱段,然后加入洋葱煮至呈金黄色

6加入绍兴酒、磨豉酱及酸梅蓉拌匀,鸭件回锅再加入水及冰糖,煮沸后将火调至中火,盖上锅盖煮30-45分钟至酱汁浓稠,鸭件熟透
