原料
葱: 半斤, 生抽/老抽: 各2勺, 料酒: 1勺, 姜片: 4~5片, 鸡蛋: 2只, 淀粉: 1勺, 盐: 2克, 糖: 3勺, 大排: 6块
步骤
1大排必须选带膘的,不要纯瘦肉的,稍厚一点的,冲洗后吸干表面水分;

2用刀背敲打一下,使肉质变软,纤维部分断开;

3肥膘处要切个断口,以免煎的时候卷起来;

4将敲打好的大排放在一只大碗里,加入姜片,少许一点点盐,生抽老抽料酒,加入鸡蛋两只,白砂糖及少许生粉;

5用手充分揉捏按摩;

6放入冰箱冷藏半个小时;

7葱洗净甩干,分别取四五根打成葱结备用;

8起油锅,中温时放入葱结慢慢煎至发软,推到锅边,留出中间部分煎大排,大排每面煎约15秒就OK,煎完取出继续下一块,注意观察锅边的葱翻翻面,不要煎焦了;

9煎好全部大排后把葱拨到锅中间,把大排一块块放回锅内的葱上面,倒入腌制大排所剩的汤汁,盖上锅盖,煮约五分钟即可出锅。(喜欢偏甜的可以在家一点点黄冰糖一起煮);

10出锅时先夹出大排,最后放上葱,造型很赞哦!
