茄子: 三条, 黄豆酱: 半瓶, 独粒蒜子: 两个, 油: 适量, 高汤: 一碗
步骤
1茄子蒜子洗干净

2茄子切段(切段后每段开两边,每边切成三条,这样不厚不薄,后面调酱不会烂),蒜子切碎

3锅上油

4油热后放茄子炸

5稍微软了就装起压一下油(茄子比较多所以分三次炸)

6第二次下锅炸,这样把油逼出来,茄子就不会那么油了

7起锅,把油压一下待用

8把油倒出留一点爆香蒜子

9把汤倒下,放半瓶海天黄豆酱(个人觉得黄豆酱的味道比豆瓣酱的味道好),炒热

10把茄子倒下翻炒

11都裹上酱了就可以起锅了(黄豆酱不咸不淡刚刚好,所以其他调料都不用添加了)

小技巧
茄子稍微炸软就可以喽,如果炸太久后面裹酱翻炒就烂了不成条,卖相就没那么好看了
