原料
兔子: 250g, 香菇: 250g, 油: 20ml, 泡椒: 5个, 姜: 1块, 蒜: 2瓣, 小葱: 1根, 香菜: 1根, 八角: 1个, 香叶: 4片, 芡粉: 5g, 花椒: 20粒, 盐: 3g, 酱油: 5ml, 糖: 3g, 料酒: 5ml, 鸡精: 3g
步骤
1兔子切块(大拇指甲大小就可以了),香菇切块,泡椒、姜、蒜剁碎,小葱、香菜切丁;

2切好的兔子用料酒、酱油腌制10分钟后加芡粉抓匀;

3取锅烧热倒油,油冒烟下兔子,兔子炸至变色捞起备用(又叫“跑油锅”);

4花椒、泡椒、姜、蒜、八角、香叶下锅炒香,加豆瓣酱炒散,加2碗水烧开,放盐、糖调味,倒入炸过的兔子,煮5分钟;

5下香菇煮,待香菇熟后开大火一点收汁,加鸡精;
