1准备材料~

2木梳准备好(放心哈,新买哒,就是做面食用的)~

3南瓜洗净去皮切块放入盘中隔水蒸熟(大概蒸了20分钟)~

4蒸好用勺子捣成泥状备用~

5面粉+白糖+酵母=混合面粉~ 倒入南瓜泥~ 搅成絮状~ 揉成光滑的面团~

6盖上保鲜膜放温暖处首次发酵至2倍大~

7发酵好的面团,用手指沾些面粉戳一下,不回缩不塌陷就发好了~ 想要蒸好的荷叶饼表面光滑,就要多揉至一会排气~ 这是我揉了10分钟的时候,切开里面还有气孔~ 大概揉了15分钟,切开完全看不到气孔就可以了(可用面包机揉,更省力)~

8将面团滚圆~ 揉成长条状~ 切成均匀的剂子~ 取出一份擀成薄厚均匀饼皮~

9饼皮上涂抹一层植物油~

10对折饼皮~

11用梳子先压出3道纹路~

12在间隔3道纹路旁边再分别压出短一些的纹路~

13捏出扇把~

14依次将全部的荷叶饼整形好~

15将荷叶饼距离分开些摆在铺有屉布的蒸锅上,盖上锅盖2次醒发至少20分钟以上~

16醒发好大火烧开,转中火蒸10分钟,关火焖5分钟即可(打开锅盖时,水蒸气不要滴在馒头上)~
