1、蛋白打发到湿性发泡可以让蛋糕卷的口感更佳绵软细腻 2、蛋糕卷要冷藏定型后再切,刀用热水烫一下擦干再切,每切一刀都要重复刚才的步骤 3、用擀面杖辅助卷蛋糕是最方便易上手的方法,也可以保证卷出来的蛋糕卷紧实均匀
