1鮮蝦剝去頭殼,挑去蝦線,切成粒

4鍋內放少許油,油熱後放蝦仁和魷魚煸炒一下(稍微炒一下即可,一會還要上鍋蒸)

5然後放蒜薹和黑木耳

6加少許食鹽,炒勻出鍋

7花蛤放水中煮至張口,撈出備用(煮好的花蛤要分成兩部分)
8雞蛋磕入碗中,加少許鹽打散攪勻

9加適量涼開水,攪勻

10放到耐熱容器中(蛋液和水的比例為1:2,一份蛋液配兩份水)

11鍋內放水,然後放入盛蛋液的容器,蛋液中加入花蛤(先拿一部反花蛤,和蛋羹一起蒸,讓蛋羹融合花蛤的鮮味)

12蒸鍋上上汽以後改中火蒸五分鐘左右,關火

13然後開蓋,加入事先炒好的菜,撒上花蛤,再蓋鍋蓋蒸三分鐘(蒸蛋羹的時間主要取決於蛋液的多少和火候的大小,蛋液少的話少蒸一會,蒸到蛋液完全凝固即可)
