豬排, 麵包屑, 雞蛋, 麵粉, 鹽, 黑胡椒, 捲心菜, 白芝麻, 蔥花, 白砂糖, 清酒, 八丁味噌
步驟
1先炸豬排。豬排一塊,麵包屑,雞蛋,麵粉。調味用鹽和現磨黑胡椒即可

2豬排如帶骨則剔去骨頭,用擀麵杖或刀背砸幾下鬆散肉質,不用砸太薄,保證厚實的口感

3肉邊緣的筋絡每隔2cm左右切一刀

4肉里的筋絡也隔2cm左右剪一刀,可以防止炸的過程中筋捲曲使豬排變形

5在一面撒鹽和黑胡椒,略按壓

6裹上一層麵粉,最好用中/高筋,低筋麵粉容易結團不利操作。用刷子刷去多餘麵粉。提起來抖一抖

7雞蛋打散,加一勺水混勻,粘了麵粉的豬排過蛋液
