24用溫度計測量,其中心溫度應該是65度,不要高過70度(主廚說溫度超過70,蛋白質就煮過頭了,雞肝凍會變得又灰又厚,還呈現顆粒狀)

25取出雞肝凍涼至室溫,再放入冰箱

26取黑胡椒顆粒用石臼搗碎(我覺得可以用現磨黑胡椒)
