草魚: 一條, 小紅辣椒: 5.6顆, 芹菜: 蔥, 姜: 蒜瓣, 花生米適量: 生抽10g, 黃酒10g: 花椒適量, 芝麻香油適量:
步驟
1準備一條草魚去除內臟,清洗乾淨

2魚切成塊,清洗乾淨瀝干水,用適量鹽、黃酒、花椒、薑片 腌制20分鐘去腥味

3油下鍋,差不多90度以上,將腌制好的魚放進鍋里煎炸(炸魚時將魚側放這樣不會粘鍋也不會爛,一次不要炸太多)將腌制魚塊的花椒薑片放著備用

4魚塊炸成金黃色,外焦里嫩(一次吃不完的魚塊可以放冰箱,想做時在煎炸)剩油可以炸下花生米

5炸好魚塊,將配菜切好(自己看圖吧)

6鍋里留少許油加熱,放入花椒、薑片、蒜瓣,炒出香味

小技巧
煎炸魚時用筷子翻不要用鍋鏟,炸魚側面不會粘鍋
