步驟
1魚肉批成稍厚的片,加鹽、雞粉、水溶生粉抓勻,再加入干生粉上漿抓勻;

2綠豆芽去頭掐尾、洗凈瀝水;

4鍋中放水燒開,銀芽焯熟撈出,放在盛器中;

用龍利魚肉吃起來方便,無骨無刺,特別是老人和小孩。如果用活殺的鮮魚味道更佳,但一定要宰殺乾淨,要上漿。
