原料
花甲: 1斤, 洋蔥: 2個, 薑末: 少許, 蒜末: 少許, 小蔥: 切段, 干辣椒: 適量, 黃酒: 一勺, 味極鮮: 半勺, 耗油: 少許, 醬油: 適量, 冰糖: 2顆, 郫縣豆瓣醬: 半勺, 鹽: 半勺, 澱粉水: 半碗, 白芝麻: 少許
步驟
1花甲頭天晚上放鹽水裡泡,讓它吐出細沙髒東西。

2第二天撈出洗乾淨,反覆多洗幾遍,放進鍋內煮至嘴巴張開,撈出用涼水沖洗一遍,瀝水備用。(過程中可放少許薑片,黃酒去腥。)

3薑末,蒜末,干辣椒,蔥段,洋蔥,切好備用。

4鍋中燒油。

14鍋中放入一碗涼水。
