豬皮: (平時做菜剩的邊角料), 姜: 兩片, 料酒: 適量, 八角: 兩個, 蔥白: 四段(每次汆燙兩段), 鹽: 一小勺, 醋: 一茶匙, 桂皮: 兩片(每次汆燙一片), 蘸醬:蒜蓉: 適量, 醋: 適量, 香油: 適量, 醬油: 適量

1忘記買蔥了(這次放了香葉,可放可不放)

2先將肉皮表面用刀刮乾淨

4開鍋後煮5分鐘後撈出自然冷卻(切忌泡冷水)

5剔除肉皮裡面的脂肪,直至露出肉皮紋理(表皮也要刮乾淨,豬毛剃凈)

8第二次汆燙去異味:肉皮加熱水 加入料酒、蔥段(忘買了)、姜,桂皮、八角,大火煮開轉中火煮10分鐘左右,撈出備用

9撇去浮沫

11開始熬制:肉皮加2.5倍的熱水,放料酒、蔥(忘買了)八角、桂皮、姜、鹽!大火煮開轉小火,煮至筷子可以輕鬆夾斷就可以了 !

12最後把香料取出
