小技巧
雪裡蕻一定要提前泡水,哪怕是泡的不咸了,等炒制時再加鹽調味! 面醬不宜多放,小火煸制,醋一點點就好了! 附:應季的雪裡蕻腌制:雪裡蕻十斤左右,晾曬一天,熬製鹽水放涼後把雪裡蕻放入鹽水滷製三天左右撈出,用手搓揉每根雪裡蕻後碼入缸中,碼一層雪裡蕻放一層鹽再碼一層雪裡蕻……至全部裝壇,吃一冬天也不會變黃變色
