步驟
1清理鵝身,除去鵝毛;

2去掉鵝屁股,避免鵝膻味;

6鵝的表面用鹽和黑胡椒粉抹勻;烤箱預熱160-180度,倒入清水,鵝胸朝下,烤1小時;

7每15分鐘用勺舀烤盤裡的汁水往鵝身上澆;

視鵝的大小,一般烤時在3-4小時; 澆汁的步驟一定不能省略,鵝肉的鮮嫩就靠它了。
