小技巧
1.西紅柿切丁後用紗布把湯汁擠出是關鍵; 2.西紅柿湯汁可以和面,這款麵餅可以不放發酵粉,但裡面要包很多餡料,所以麵糰一定要揉的軟,一斤面放六兩水,可以再放一勺油,麵糰和好後特別滋潤,然後麵糰要醒15分鐘; 3.在醒麵糰的15分鐘里,把雞蛋炒好還要放涼, 4.然後把醒好的麵糰分成小劑子擀成麵皮,然後再和餡; 5.和餡時只要把番茄丁倒入晾涼的炒雞蛋上,加入糖和鹽就可以了; 6.麵皮里儘可能多包些餡,包好後,因為麵皮薄,稍微用手摁扁就可以,不要用擀麵杖擀扁。
