雞蛋: 4個, 細砂糖(蛋黃): 30克, 細砂糖(蛋白): 50克, 玉米油: 30克, 低粉: 35克, 牛奶: 30克, 牛奶(奶酪餡): 200克, 蛋黃(奶酪餡): 2個, 低筋麵粉(奶酪餡): 10克, 淡奶油(奶酪餡): 100ml, 細砂糖(奶酪餡): 50克, 玉米澱粉(奶酪餡): 10克, 香草精(奶酪餡): 幾滴
步驟
1先做奶油餡:兩個蛋黃打入碗中,用電動打蛋器打到顏色變淺變濃稠

2篩入低粉、澱粉

4把牛奶倒入奶鍋,加糖煮沸

5把1/3的牛奶倒入蛋黃麵糊並攪拌均勻後,把攪拌好的蛋黃麵糊全部倒回牛奶鍋里

6加入香草精,邊加熱邊攪拌;直到沸騰,變得濃稠後離火

7馬上把煮好的蛋乳泥倒入坐在冰水的碗中,不停攪拌,使之保持光滑、細膩;冷卻後放冰箱冷藏

8把100ml的動物性淡奶油打發到可以保持花紋的狀態,與冷卻好的蛋乳泥翻拌混合;此時我們可以將奶油餡放冰箱冷藏待用

9開始製作戚風蛋糕:蛋白與蛋黃分離,蛋白分三次加糖打發至濕性發泡

15麵糊裝入一次性裱花袋後擠入紙杯5~6分滿

16放入提前預熱好的烤箱中層,上下火180度,烤15分鐘左右
