原料
鱈魚: 2條(兩人量), 雞蛋: 2個, 料酒: 2勺, 澱粉: 3勺, 蔥姜蒜: 適量, 白糖,醋: 適量
步驟
1鱈魚反覆清洗!切一指寬的段!放料酒和鹽腌制20分鐘,準備澱粉,雞蛋,少量水,攪拌成糊!將腌制好的鱈魚泡在澱粉液中!

2鍋內熱油適量,將裹好澱粉液的鱈魚放入鍋中,小火,炸至兩面金黃,撈出備用,炸的過程要小心油弄到衣服上,準備好武器!

3準備蔥姜蒜,辣椒!(刀工差,有待練習)醬油,花椒麵,醋,鹽,放碗中調汁備用!

4鍋中留底油,放入白糖,熬糖色,一定要小火!熬至棗紅色,放入炸好的鱈魚,小火翻炒!
