1將麵糰材料除奶油外攪拌成稍具光滑狀的麵糰,加入奶油攪拌至可拉出透明薄膜,破洞處為鋸齒狀的擴展階段,放溫暖處進行基礎發酵

2將麵糰分割成4份,滾圓後鬆弛約10分鐘
