原料
黄鱼 2条, 豆腐 200克, 葱姜蒜 适量, 干红辣椒 4~5根, 淀粉 少许, 料酒, 酱油, 醋, 盐, 白糖
步骤
1黄鱼处理干净(头可留可去,我的锅有点小,所以把头去掉了),洗净的黄鱼沥干水,用厨房纸将鱼身上的水分全部擦干

2葱姜切末,蒜切小块,干辣椒掰小段

3豆腐切块

4在鱼身上薄薄地涂一层淀粉

5锅烧热,先用姜片在锅壁上擦一遍,再倒入油(为了煎鱼时鱼皮不破,第2、3、4非常重要)

6油稍热即可将鱼放入煎鱼,2分钟后翻面,再煎2分钟

7将两条鱼稍分开,锅中留出一些空,先后放入干辣椒,葱、姜、蒜略炒

8加入酱油、料酒、盐

9接着倒入豆腐块

10锅中加热水,没过鱼和豆腐,大火煮开,转中小火,加醋煮约15分钟

11出锅前点少许白糖,再稍煮即可
