6蛋白加白糖,用电动打蛋器打到硬性发泡

7将蛋白分三次加入面糊中,拌匀,手法如戚风蛋糕

8不沾平底锅抹少许油,烧热后舀入一勺面糊,小火慢烙,待边缘凝固用竹签能轻易挑起且表面有很多气孔时,翻面烙另一面至上色后取出;

9将锅子放在湿布上降温,以保证烙下一个饼胚时颜色均匀
