黄鳝: 3条, 料酒: 2勺, 生抽: 2勺, 玉米淀粉: 1勺, 蒜瓣: 3个, 生姜: 1块, 干辣椒: 10克, 花椒: 10克, 郫县豆瓣酱: 1勺, 芹菜: 3颗, 水: 适量, 耗油: 1勺, 鸡精: 1勺

1这个就是孩子爷爷在老家捉的鲜活的野生黄鳝,个头还挺大的呢!听说野生的黄鳝最有营养,最大补了!

2找一个木板,一根铁钉,一把锋利的小刀!用铁钉插在黄鳝的头部,钉在木板上,一只手捏住黄鳝的身子,另一只手用锋利的小刀划开黄鳝的肚子,把里面的内脏全部掏出来,最后切掉头部!(这个黄鳝滑不溜丢的特别的不好收拾,看起来有点儿像小蛇,我也很害怕不敢亲自动手,刚好楼下的老爷爷会杀黄鳝,我就请他帮我把黄鳝处理了!)

3依次处理好所有的黄鳝,再清洗干净!

4处理好的黄鳝切成段儿备用!(我把所有的黄鳝都处理好了切段,分成若干小份儿放在冰箱冷冻保存!吃的时候提前拿出来解冻即可!今天做的这道干煸黄鳝我用了3条黄鳝!)

5黄鳝段加入料酒,生抽和玉米淀粉抓匀,腌制20分钟!

6蒜瓣3个去皮稍微拍一下即可,生姜一块洗净切片,芹菜3颗去掉芹菜叶洗净切成段儿,干辣椒10克,花椒10克,郫县豆瓣酱1勺备用!

7锅烧热倒入适量的油烧至七成热,放入腌制好的黄鳝段中火慢慢的炸!

8炸至黄鳝段呈金黄色即可捞出沥干油分备用!

9锅烧热倒入适量的油,放入生姜,蒜瓣,花椒,干辣椒炒出香味儿!

10放入郫县豆瓣酱炒出红油来!

11放入黄鳝翻炒均匀!

12加入一勺耗油,放入适量的水大火煮开后转小火慢慢的炖煮!(水不要放太多,刚好淹没住黄鳝即可!)

13黄鳝炖熟后大火收汁儿!

郫县豆瓣酱很咸,蚝油里面也含有盐分,烧这道干煸黄鳝的时候,不需要另外再加盐!
