原料
黃油: 125克, 低筋麵粉: 175克, 細砂糖: 80克, 朗姆酒(可選): 50毫升, 玫瑰花果醬: 25克, 雞蛋: 3個, 蔓越梅干: 60克, 泡打粉: 5克, 杏仁片(可選): 少許
步驟
1蔓越梅干用朗姆酒泡著,備用;(沒有朗姆酒,用水也可以)

2黃油切小塊,軟化至手指壓下去很軟即可;

3把砂糖分3次,加入黃油中,攪拌至膨大的感覺;

4攪拌完是很順滑的糊;

5將打散的雞蛋液,分6次,加入黃油糊中攪拌,直至完全混合(千萬別貪心,倒多了會水油分離);

6蛋液全部攪拌完,糊又開始變得更厚實;

7低筋麵粉和泡打粉過篩,入糊中;

8麵粉和糊拌勻;

9加入朗姆酒浸泡的蔓越梅干;

10加入玫瑰糖漿,然後進行攪拌(這個時候糊比較難拌,可以用筷子);

11糊調好後,倒入模具,提起模具順時針旋轉並震一震蛋糕,把空氣排出;

12烤箱預熱180度,中層,烤10分鐘後皮就凝結了,這時拿出來用刀輕輕的劃個「十」字,然後撒上杏仁片,繼續回烤箱;

13繼續回烤箱,180度,30分鐘,即可。
