中筋麵粉: 220g, 溫水: 100g, 酵母: 3g, 糖: 10g, 精鹽: 1g, 蔥: 1棵, 油: 適量
步驟
1準備材料~

2蔥切末,油鹽量好~

3將糖,酵母,溫水(和手溫差不多)調成酵母水,攪勻靜置一會~

4酵母水一點點倒入麵粉盆中,攪成絮狀~

5在加入精鹽(均勻的撒開)~

6揉成光滑有韌勁的麵糰(在案板上大致揉10分鐘)~

7蓋上保鮮膜放溫暖處發酵至2倍大,大概1個多小時(冬天的陽台光線最好)~

8用手指沾麵粉或沾水戳一下麵糰,不回縮不塌陷就發好啦~

9拿出麵糰再一次揉面,排氣最關鍵步驟(有耐心的揉吧,能聽見麵糰里的氣泡噼啪的被擠出,儘量將空氣排出,做好的饅頭才沒有大洞大眼的)~

10揉一會用刀切開,裡面還有少許氣泡~

11繼續揉,直至沒有氣孔就揉好啦(大概揉了10分鐘)~

13擀成長方形的大片~

17從一側捲起,卷緊、粗細一致些~

18切成大小均勻的小段~

19拿出一份,用筷子在中間壓一下(如圖)~

20兩手稍微抻拉一下~

21兩邊向底卷過來,捏實~

22蒸鍋倒好水,把做好的蔥花捲擺在鋪有屜布的蒸屜上(沒有屜布的在蒸屜上抹些油)距離分開些,蓋上蓋子,進行2次發酵~

23發酵至2倍大時(20分鐘),開蒸~

24冷水上鍋蒸,大火燒開,轉小火蒸10分鐘(時間根據蔥花捲大小而定,稍大些多蒸2分鐘),蒸好燜5分鐘在打開鍋蓋,水蒸氣不要滴在蔥花捲上~

25蔥油小花捲來啦,鹹淡適宜,蔥香四溢,在配上一碗湯粥,暖心暖胃吖(切好的蔥花可加一點點小蘇打蒸好時蔥顏色還是綠色噠)
