黄花鱼: 1只, 葱: 1根, 姜: 5片, 蒜: 8瓣, 料酒: 2勺, 生抽: 4勺, 糖: 3勺, 醋: 4勺, 干淀粉: 适量, 剁椒: 2个, 盐: 1小勺
步骤
1鱼处理干净,将两面鱼身各片开四五刀,沥干备用

2用1勺料酒,2勺生抽,1小勺盐腌制10分钟左右

3葱头切小段,葱尾切细丝,姜切丝,蒜剁成蒜蓉,剁椒切成薄片

4调汁:在小碗中倒入1勺料酒,2勺生抽,4勺醋,3勺白糖,5勺清水搅拌均匀,另外再拿个碗用适量干淀粉和清水搅拌均匀

5锅中放油,油温大火烧至180度,鱼裹上干淀粉,放入锅中后转小火炸至两面金黄盛出

6锅中留少许底油,烧至五成热,改小火放入葱姜蒜爆香

8烹入淀粉水勾芡,如果太浓稠再加点清水,直至调整到自己满意的状态
