步骤
1将鸡肉清洗干净,剁成骨牌大小的小块

2取一个大盆,剁好的鸡肉块放入其中,加入一勺盐、一勺生抽、一勺老抽、两勺料酒、葱丝、姜丝、蒜片适量。搅拌均匀让鸡肉提前码上味。大概腌制30分钟

3做锅热油,趁油还没有热的时候,丢4、5粒冰糖进去

4一边搅动糖粒,一边观察火候。要不停的搅,看着糖逐渐消融,油中泛起小泡沫,颜色慢慢加重,转为浓褐色

5OK!把鸡肉放进去的同时马上把火开大,快速翻炒

6让每一块鸡肉都均匀粘上糖色

7倒入开水

8调入2勺生抽、一勺老抽,水稍微多一些,因为一会儿要放豆腐

9干菇清洗几遍,洗净泥沙,然后将泡发好的干菇连同泡菇子的水也一并倒入(因为我买的干菇比较小,所以可以整粒倒入,如果太大的话,稍微切一切。)

10豆腐切骨牌大小(提前汆一下水,去除生味,也不易碎裂)倒入锅中

11一勺盐、一粒八角,用锅铲搅拌均匀,改小火,加盖炖个15分钟

12期间,用锅铲翻炒2、3次,使鸡肉均匀入味。待汤汁收的差不多时,将青椒倒入

13翻炒几下,利用锅里的热气炒至断生即可
