原料
黄油: 60克, 低筋面粉: 150克, 糖粉: 50克, 鸡蛋: 1个, 抹茶粉(日本宇治): 2克, 可可粉: 2克
步骤
160克的黄油小块室温放置软化,不用打发,直接筛入150克低筋面粉和50克糖粉,用手抓抖散至粗玉米粒状;

21个鸡蛋液搅打均匀后,逐量加入步骤1中,用手揉成光滑的面团; *鸡蛋液不!要!一!次!性!加入,好调整面团的干湿程度。

3将面团分成三个: 140g加2克抹茶粉揉匀、70g原味面团 40g加2克可可粉揉匀,再分出5小团(1个4g、2个7g,两个12g)

4取25克原味面团压平擀成面片,将4g可可面团搓细长条放中间做鼻子;

5取13克原味面团包裹住鼻子部分;

6两个7g克可可面团搓细长条放两侧做眼睛;

7剩下的原味面团全部包裹在外面,两个12克可可面团搓长条做耳朵,取适量抹茶面团塞在两耳朵之间,如图所示;

8最后将剩下的抹茶面团全部包裹在外面,放冰箱冰冻半小时;

9取出切厚片~

10烤箱预热175度,中层,上下火,15分钟,最后5分钟用锡纸盖着表面防上色过深。出炉会摆在烤架上晾凉,饼干会变得酥脆。
