原料
麵粉: 1000克, 酵母: 5克, 水,蔥姜: 500克, 蘿蔔,肉末,油渣: 適量, 鹽味精、雞蛋: 適量、一個, 生抽老抽醋黃酒: 適量
步驟
1500克左右的溫水(不超過40度)加入5克酵母攪拌均勻

2揉成光滑的麵糰(水量按照自己的麵糰酌情添減)

3發酵麵糰 (現在天氣熱可以放盆里包好布放外面曬,)我都是老式電飯煲按煮飯鍵五秒鐘按保溫,然後放裡面一個小時15分鐘發的特別好。(特別適合冬天)

4和餡,放入蔥姜雞蛋,鹽味精,生抽醋黃酒老抽攪拌均勻

5放入切好的油渣(可不放)

9面發酵好多揉揉去氣孔,揉長條

10切兩厘米段壓扁擀圓

11包入餡

12包好後靜置20分鐘等於二次發酵(冬天就放蒸鍋開火三分鐘過火發酵半小時)

13上鍋蒸20分鐘關火、三分鐘後取出包子
