2清水浸泡牛腱去血水

8香料放入紗布袋紮起,放入砂鍋,倒入清水,蓋過牛腱

9煮開後大火10分鐘,轉小火1小時後加鹽調味,繼續煮,直到筷子可以穿過牛腱

10關火後,放入剝好的土雞蛋,蓋上砂鍋蓋

11一小時後取出牛腱芯晾涼切片。雞蛋可以放砂鍋繼續鹵,12小時後取出

12放涼的老鹵表面有比較多油脂,底下有小碎肉,香料等雜質

13小心過篩後再次煮開,放涼。倒入高溫消毒過的玻璃杯,冰箱冷冰保存。如一個月未重新使用,需要取出煮開和消毒。
