原料
高筋麵粉: 200g, 奶粉: 7g, 糖粉: 30g, 鹽: 2g, 雞蛋液: 20g, 水(37-40度溫水): 90g, 酵母: 3g, 黃油(室溫軟化): 20g, 豆沙: 180g, 雞蛋液少量: 刷表面
步驟
1酵母加溫水先化開,大概3分鐘左右就好

2將高粉 奶粉 糖粉 鹽 雞蛋液倒入攪拌盆,啟動廚師機

3再將化好的酵母水慢慢加入,攪拌至麵糰成團

4再將黃油切小塊加入攪拌盆

5攪拌至能輕輕拉出手膜的狀態

6整理成團蓋上保鮮膜室溫發酵2倍大,大概一個半小時左右

7手指粘點麵粉,撮個小洞下去,麵糰不回縮不反彈就是發酵好了

8將麵糰拿出來拍扁把空氣按壓出來

9平均分成9份,蓋上保鮮膜鬆弛15分鐘

10把豆沙分成9份每份20g

11拿一塊麵糰按平,把豆沙包在中間

12收口收好

13收口朝下,將麵糰杆成橢圓形,再用刀子在麵糰上切開,只切露出豆沙就好,不要切太深,免得把麵糰滑破

14再把麵糰翻面,兩邊捏住

15做好後放入烤盤中,每個之間留點位置

16放一盆熱水在烤箱底層,把麵包放進去發酵第二次。大概30-40分鐘左右

17麵包發酵好了拿出來,把底層的水也拿出來,烤箱預熱上火180度下火165度,再將麵包表面刷上雞蛋液

18送入烤箱中層烘烤15分鐘,表面上色拿出來蓋上錫紙
