5大火,油可以放多一點,油熱了以後放蔥蒜爆香

6放入茄子,油一下子全部被吸光,不用擔心,少放一點水進去,一會茄子裡的水分會出來

7翻炒至茄子差不多變軟,舀一勺豆瓣醬放進去,醬略咸,口味淡用量酌減,但是太少了的話豆瓣醬的香味就會打折扣,可以先少放一點之後邊嘗邊加
