3切斷雞頭、雞脖子,切除雞屁股,將整雞一分為二的切開,在雞身上抹一層鹽,腌制35—40分鐘

4鍋中加入水,放入香蔥結、老薑3/4片、香蔥根不要丟掉,洗凈放入,大火燒開

5將腌制好的三黃雞連同雞頭、雞脖子一起放入開水中,加入少許料酒,大火煮制10—12分鐘,用筷子輕鬆扎入無血水溢出即可

6時間到後,關火蓋上鍋蓋,燜制10分鐘

7將燜好的三黃雞放入冰水中,使雞皮和雞肉快速收縮

8取出冰好的雞肉。(冷熱交替可多次進行,我只冰了一次)

9熬蔥油,鍋中加入適量食用油,待油熱後放入蔥白段
