分享下几个家常炖鱼好吃不腥的小窍门: 1、鱼的内脏、鱼鳃、腹内黑膜、靠脊骨处的积血一定要彻底清除; 2、清洗好的鱼一定要沥干或擦干水分; 3、锅烧热后再下油,油烧热后再爆锅; 4、调味料,比如葱姜蒜、面酱或豆瓣酱,一定要充分炒出香味后再下鱼,但注意一定要用小火,不要炒煳; 5、料酒要在鱼下锅经过煎制后、锅子的温度足够高的时候,溜著锅边烹入; 6、煎制以后的鱼,加热水炖,最好一次加足水,若是中间加水,也要记着加热水; 7、炖鱼得用小火,炖制时间要充分,细火慢炖,鱼才会入味,鲜香。
