小技巧
馒头最好事先在冰箱冷藏,太干或者太软的馒头,不好切,也就不容易切出规则的小丁了。 蔬菜可以根据个人喜好随意选择,焯水后软烂的,能成团的即可。或者,可以专门挑选孩子不爱吃的呢! 蔬菜球包裹的顺序,一定要记住,先裹淀粉,再裹鸡蛋液,最后裹馒头粒。 蔬菜球一定要复炸一次,可以将多余的油逼出来,防止过分油腻。 复炸虽然很关键,但是要切记:快进快出,馒头粒很容易被高温炸糊。用大漏勺盛装,快进快出。
