原料
鸡胸肉: 500g, 胡萝卜: 700g, 郫县豆瓣: 30g (3勺), 糖: 少许, 淀粉: 15g, 醋: 少许, 盐: 适量, 面粉: 4杯1000g, 酵母: 6g, 牛奶: 150ml, 冷水: 100ml
步骤
1面粉中加入糖、盐酵母和冷水、牛奶和成面团进行发酵 (软硬和平时蒸包子的面团一样,这步我没拍)为了面皮有淡淡的香味所以我家了一点糖和牛奶;
2发酵的时候开始处理鸡肉,鸡胸切成小块比平日吃宫保鸡丁的鸡肉小一半儿,然后放料酒、盐和湿淀粉腌制让鸡肉更鲜嫩;

3葱姜切末备用,胡萝卜切丁

4郫县豆瓣和用醋、糖、盐、淀粉、醋、酱油少许水兑个碗汁;

5锅中倒油,油热后调小火将鸡肉下锅,炒制变色捞到盘中备用;

6再将胡萝卜丁放入油锅过油稍变色后捞出备用;

7接着将豆瓣勾兑的汁入锅中小火熬制粘稠,倒入鸡丁和胡萝卜丁;(鸡丁变色即可,后面还要蒸,炒老了就不好吃了)

8开始包包子,方法和普通包包子一样,包好好入蒸锅;

9水开后蒸20分钟即可。
