原料
雞蛋: 4個, 牛奶: 70克, 植物油: 30克, 細砂糖A: 30克, 低筋麵粉: 80克, 細砂糖B: 50克, 白醋: 5克, 鹽: 1克, 奶油: 150克, 鮮果: 適量
步驟
1水、植物油、白糖30克一起在盆里攪拌至糖化,篩入低筋麵粉,攪拌均勻;

2雞蛋4個,用個無油無水的盆把蛋清和蛋黃分離;

3蛋黃加入步驟2的麵糊中,攪拌均勻;

4蛋清中加入食鹽、檸檬汁,分兩次把白糖(B)加入蛋清中打發至中性發泡;

5蛋白和蛋黃糊分兩次翻拌均勻;

6將蛋糕糊倒入鋪有烤紙的烤盤上,用刮板或刮刀抹平;

7放入上下火190/170°C預好的烤箱中層,約烤15分鐘;

8取出烤好的蛋糕,震盤、倒扣出來,撕下烤紙,放涼;

小技巧
1、裝雞蛋的容器和打蛋器一定要無油無水,避免打不發; 2、蛋清攪打至濕性發泡即可,避免打老,影響口感; 3、蛋糕出爐馬上撕掉烘焙紙並切割蛋糕; 4、打沙拉醬時,倒油一定要慢,避免過快出現油水分離;
