原料
刀鱼(带鱼), 长茄子, 酱油, 蚝油, 白糖, 盐, 姜, 葱, 蒜, 香菜, 水淀粉, 料酒, 胡椒粉, 小辣椒碎
步骤
1刀鱼治净切段,加料酒、盐腌制5—10分钟

2长茄洗净去蒂,手撕成条,加盐稍卤一下

3用油煎软、盛出备用

4锅内续油,八成热后下入鱼段,煎成两面金黄(鱼入锅前用厨纸拭净水分,防止油溅出)

5下入葱姜蒜碎、酱油

6加入茄子稍加炒制(别把鱼弄碎了)后,加蚝油、白糖、料酒炒匀

7加入适量水,中火烧开后关中小火烧制10分钟左右,加盐、胡椒粉调味后,淋水淀粉勾成匀芡,撒香菜碎和辣椒碎即可
