泡芙皮:水: 160g, 低粉: 100g, 无盐黄油: 80g, 细砂糖: 5g, 鸡蛋(全蛋): 3个, 馅用料:牛奶: 200ml(15ml放入蛋黄液), 动物性淡奶油: 120ml, 低粉: 20g, 细砂糖: 60g, 蛋黄: 2只
步骤
1将水、细砂糖、黄油放入锅中加热,加热到黄油融化,此时已经微微沸腾

2筛入低粉,用刮刀或者木棒搅拌

3烫熟面粉,搅拌到无白色颗粒,倒入无水盆中,将面糊摊平,冷却至不烫手

4分三次加入蛋液,每一次与面糊充分融合再加入下一次,将面糊搅拌粘稠,能提起成倒三角状态即可

5面糊装入裱花袋挤出泡芙形状,烤盘铺锡纸,留出间隔,烤箱预热185度,上下火,烤盘放入中下层,烤20~25分钟,看上色情况!根据自家烤箱脾气而定!

6烤完不要马上拿出来,避免回缩,在烤箱放置一会再取出!

7馅的做法:将15ml牛奶放入蛋黄液中,用电动打蛋器打匀

8然后筛入低粉继续打,和蛋黄充分混合!

9将细砂糖和185ml牛奶放入锅中煮沸,煮沸的牛奶加入到之前的蛋黄糊中,边加入边用电动打蛋器搅打。

10将混合的液体倒回锅中继续加热,边加热边用刮刀不停搅拌,煮至粘稠并沸腾即可,倒入放在冰水中的碗里,冷却盖上保鲜膜放入冰箱冷藏

11冷藏半个小时,将淡奶油打发与其混合,搅拌均匀
