步骤
1首先,做个饼底~准备100g消化饼干

2把饼干放入保鲜袋,用密封夹夹紧,用擀面杖把饼干打成残废!哦不,是粉碎?

4准备50g黄油

5隔水加热,融化黄油

8在6寸活底模具里铺一层烘焙油纸

9讲混合了黄油的饼干渣渣倒入模具中,用勺子压实,饼底完成!!! 包上保鲜膜放冰箱冷藏定型

10接下来准备做果冻层~准备10g黑枸杞

11加入200ml热水及三分之二冰糖,把黑枸杞泡出颜色后滤出深色枸杞水 滤出的黑枸杞加入50ml热水及三分之一冰糖,滤出浅色枸杞水

12吉利丁片2片用冷水泡软

13枸杞水加热,放入泡软的吉利丁片充分混合 (深色枸杞水加三分之二吉利丁片,剩下的加在浅色枸杞水里)

14加了吉利丁的枸杞水盛入碗里,晾凉后放冰箱冷藏至变成果冻

15开始做慕斯层~100ml淡奶油倒入打蛋盆 (淡奶油一定要先放在冰箱冷藏后才能使用,不然是打发不了的……之前我就试过手动打发没冷藏过的淡奶油……手废了,没打发的奶油做了一大锅奶油浓汤,喝到怕?)

16在淡奶油里加入10g细砂糖

17用电动打蛋器打发淡奶油,完成后先放冰箱冷藏保存 (想练肌肉并且手速够快的朋友,欢迎手动打发淡奶油?)

18200ml加上2片事先用水泡软的吉利丁片,10g细砂糖,隔水加热至吉利丁片完全溶解在酸奶中 (加热后的酸奶分层了!不知道是不是这个部分出了问题???)

19酸奶晾凉后加入刚才打发好的淡奶油,搅拌成慕斯糊

20取出冰箱里的饼底,倒入慕斯糊,轻轻震平,这样才不会有气泡产生,放入冰箱冷藏至蛋糕成型 (看了其他厨友的方子,一般都是冷藏四个小时,而我是直接放过夜了)

21在成型的慕斯蛋糕下放个杯子,用电吹风给模具加热,帮助脱模 (图片的碗请直接忽略,要用杯子才方便)

22脱模成功,给蛋糕围上一圈透明围边并系上丝带用于固定

23黑枸杞果冻取出,用勺子搅碎

24最后要来装饰 ?了~ 由下至上依次为:消化饼干渣渣做“沙滩”→ 椰蓉做“浪花”→浅色黑枸杞果冻+深色黑枸杞果冻做有渐变效果的“海洋”→摆上贝壳装饰→完结撒花???
